Chocolate Chip Cookies (vegan and gluten free) – Annie

2 ½ cups almond flour
½ teaspoon aluminum free baking soda
½ teaspoon sea salt
½ cup maple syrup
½ cup coconut oil, melted
½ cup almond slices
½ cup chocolate chunks: Ghiradelli 100% chocolate bar, no sugar, cut into small chunks

Mix all ingredients together in a large bowl. Drop by the spoonful onto a large cookie sheet. Bake in a 350 degree oven 9-15 minutes until edges are browned and centers are firm. Remove from oven and let remain on cookie sheet a few minutes, and then remove onto a cooling rack to cool. Store in a tin. Makes 24 medium size cookies.
