Sun Dried Tomato Pesto. Giada de Laurentis – Annie
2 cloves garlic
1-8.5 oz. jar sun dried tomatoes in olive oil
Salt and freshly ground pepper to taste
1 cup fresh basil leaves
1/2 cup freshly grated Parmesan Cheese
Pasta of your choice cooked al dente-12ounces
Cook pasta according to package, reserving 1cup water. Blend tomatoes and oil, garlic, salt and pepper, and basil in a food processor until tomatoes are finely chopped. In a large bowl combine the tomato mixture and the Parmesan Cheese. Add pasta and toss to coat, adding enough reserved liquid to make a nice sauce.
