1 tablespoon freshly grated ginger
3 tablespoons cooked pureed carrot
2 tablespoons cider vinegar
2 teaspoons miso-I used brown rice and soy
4 tablespoons sunflower oil
2 tablespoons water
2 teaspoons honey
Whisk together all ingredients, or puree them in a food processor until smooth. For a thinner dressing add more oil and/or water.
