Red Quinoa Tabbouleh – Annie

1 cup uncooked red quinoa
1/4 cup lemon Juice
1/4 cup olive oil
1/2 cup chopped fresh mint leaves
1/2 cup chopped Italian parsley
1/2 cup thinly sliced green onion
2 cups diced feta
1 1/2 teaspoons kosher salt
Diced  cucumber  (optional)
Diced tomatoes (optional)
freshly ground Pepper to taste

Cook quinoa according to package, drain well and place in a bowl.

Add olive oil, lemon juice, and 1 1/2 teaspoons salt.

Chop the remaining ingredients and add to quinoa.  (I add the tomatoes when serving, as I do not refrigerate them)

Serve at room temperature.
