Pineapple Salsa – Annie

1 cup ripe pineapple, peeled, cored, and diced
1 fresh Serrano chile, seeded and minced
3 scallions, white part and one inch green, minced
1/4 cup red bell pepper, minced
2 tablespoons fresh mint, minced

Combine all ingredients and refrigerate until serving. Good with chips, cheese quesadillas and grilled meats.
